Creamy halloumi and tomato orzo by Meliz Berg

 This recipe is almost word for word taken from the fantastic Meliz Berg of the @melizcooks Instagram account. Her recipes are mouthwatering, beautifully presented and simply perfect. I haven’t changed much in this particular recipe, the only thing I omitted is mint as I didn’t have any. Please have a look on her Instagram as it’s a feast for all the senses. Unfortunately, my presentation skills are far far behind hers...



1tbsp olive oil

1 onion, chopped

1 carrot, chopped

2 celery sticks, chopped

3 garlic cloves, sliced

300g orzo

A can of chopped tomatoes

1tsp dried parsley

1l vegetable stock

1 pack of halloumi cheese, cut into small pieces and lightly fried or grilled


1. Gently fry the onion, carrot, celery and garlic in olive oil, on low heat, for about 10 minutes. 

2. Add orzo, fry gently for a couple of minutes. Make sure orzo is well coated with oil.

3. Add canned tomatoes, parsley and vegetable stock and leave to cook until orzo has softened. 

4. Add halloumi. 

5. Enjoy!
